Monday Menu Planning



Whew..it's been a long time since I posted a menu plan, or seriously even made one! It's busy season at work, though, and I really need to be as organized as possible. Though I'm still eating primarily Jenny Cuisine, the rest of my family isn't. With busy work & school schedules, my girls don't eat home as often as I'd like but perhaps I can coax them into sitting around the table a couple of times this week.

I'm baaaaack! So sorry for the disappearance but I had one "crisis" after another that prevented me from posting. First, my computer crashed and even after my fabulous tech guy (aka Strider) repaired it, I had to restore my programs, find my data, etc. etc. Then yesterday my internet and cable tv went down, ack! Add those issues to the fact that it's the busiest time at work and, well, you get the picture.

Here I am, though, sitting in the Ormond house waiting for my coffee to brew, ready to continue the 30 Days of Photos.

On My Hearth: Cube Steak Parmesan



I haven't cooked cube steak in years but when it went on sale this past week (BOGO!) I grabbed some. In the past the only "recipe" I used was what my Mom taught me - country-frying it with gravy. Wanting to try something different, I headed over to Allrecipes and found this tasty-looking recipe. Hope Beren enjoys it!


Cube Steak Parmesan

3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 eggs
2 tablespoons water
1/3 cup saltine cracker crumbs
1/3 cup grated Parmesan cheese
1/2 teaspoon dried basil
3 tablespoons vegetable oil
4 cube steaks -- (4 ounce)
1 1/4 cups tomato sauce
2 1/4 teaspoons sugar
1/2 teaspoon dried oregano -- divided
1/4 teaspoon garlic powder
4 slices mozzarella cheese
1/3 cup grated Parmesan cheese

Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.

Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top.

Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

Makes 4 Servings
