On My Hearth: Seven-Layer Gratin


I found a wonderful new-to-me farmers market the other day, the only locally-grown farm in my area! The owner, Sheila, was such a sweetheart, gave us wonderful personal attention (and samples!) and information about her produce. Everything was so beautiful and fresh, I could've loaded down my car with goodies! I scooped up some gorgeous zucchini which I can't wait to use in this casserole tonight.

To make it vegetarian, I'll be substituting Boca crumbles for the ground turkey and to lighten it up, reduced-fat cheese.


Seven-Layer Gratin

6 servings
Prep: 15 minutes
Bake: 50 minutes

Ingredients

* 3 medium zucchini, cut diagonally into 1/4-inch-thick slices
* 1 yellow squash, cut diagonally into 1/4-inch-thick slices
* 1/4 cup plus 2 tablespoons dried bread crumbs
* 1/2 teaspoon dried sage
* 1 tablespoon flour
* 1-1/4 teaspoons salt
* 1/2 teaspoon black pepper
* 1 can (8.5 ounces) artichoke hearts, drained
* 1 scallion, trimmed and minced
* 1-1/2 cups shredded Swiss cheese
* 3/4 cup light cream
* 1/2 pound ground turkey
* 2 tablespoons grated Parmesan cheese

Directions

1. Heat oven to 350°. In large bowl, mix zucchini, yellow squash, 1/4 cup of the bread crumbs, sage, flour, 1 teaspoon of the salt, and pepper. In blender, puree artichoke hearts, scallion, 1/2 cup of the Swiss cheese, 1/4 cup of the cream, the remaining salt and a pinch of pepper.

2. Spread one-third of the squash mixture over bottom of a shallow 2-quart baking dish. Spread half of the artichoke puree over squash. Top with half of the turkey. Repeat layering; top with the remaining squash mixture.

3. Toss together the remaining 1 cup Swiss cheese, remaining bread crumbs and the Parmesan. Sprinkle evenly over gratin. Drizzle with the remaining 1/2 cup light cream.

4. Bake at 350° for 50 minutes or until squash is tender and top is golden. Let stand 10 minutes before serving.

Sunday Stroll

I am in constant awe of my friend Aisling's blog and before now have been too intimidated to participate in her Sunday Stroll...smile...but today I took a little walk and enjoyed the sights and scents of my tiny herb garden.

Earlier this week I trimmed my rosemary which was totally out of control! I love rosemary, though, it's an essential element in kitchen witchery!



I could have cut it down even further but I discovered Charlotte here spinning her web and didn't want to disturb her.



I seriously have enough oregano to supply an Italian restaurant!



I know I should use gloves and wear shoes but I can't help it, I love the feel of the earth on my hands & feet, don't you?

On My Hearth: Pina Colada Coconut Cake


To end our vacation on a festive note, we'll be tossing some burgers & dogs (veggie and "real") on the grill today, making this deeelicious cake for dessert! Since I have all the ingredients on hand and the cake mix was BOGO, it'll be a frugal treat as well!

And for Happy Hour, I'll be cranking up the blender with a Pina Colada Freeze, yummy!

PINA COLADA COCONUT CAKE

18 1/2 ounces white cake mix
3/4 cup pina colada mixer
2 cups sour cream
2 cups powdered sugar
8 ounces Cool Whip, thawed
7 ounces coconut, grated

Prepare cake mix using 3/4 cup Pina Colada Mixer for part of water. Bake in two 9 inch layers. Cool. Stir sugar into sour cream. Fold in whipped topping and 1/2 cup coconut.

Fill and frost cake. Garnish - cover top and sides with remaining coconut.

Wrap tightly with plastic wrap. Refrigerate. may be kept up to 3 days in refrigerator.

Serving Size: 12.

Happiness Is...(the Week in Review)

Please forgive my absence, have not been spending much time on the computer this past week. With two extra kids in the house and Beren and myself home on vacation, it was all I could do to keep up with the minimal housework and cooking while entertaining the girls and enjoying some summer fun!

We took them to the beach....



and out sailing...





indulged in some fun food such as indoor S'mores!





spent most mornings by the pool before the afternoon storms rolled in...





and in the evenings Beren and I sometimes headed out for some grown-up entertainment....





After a nice-but-tiring week, yesterday we returned them to their Mom and then visited our favorite thrift store in that area. We scored some wonderful treasures including a brand new grill/sandwich maker for $12.99! Considering the retail price of this baby is $39.99, I'd say we got a great deal, wouldn't you?



Now, I have a little indoor grill but I've never owned a sandwich maker, and since this one didn't come with the instructions, I'm clueless about exactly how to use it. I don't even eat sandwiches very often but everything in moderation, right?

Do any of you have recipes you could share with us? I did find a Cuban sandwich recipe and since I live in South Florida where the Cuban influence is huge, we'll appreciate making these now & then. However, I don't normally eat pork, nor do my kids, so I need other suggestions. Anybody?

Monday Menu Planning


Week 2 with Beren's girls, have actually had little issue with picky eating this past week. *smile* I think they're becoming accustomed to healthy sit-down family dinners instead of the "meals on the run" they seem to have at their Mom's house. Everyone does things differently, of course, but in our home mealtime is important and pleasurable!

Meatless Monday ~ Beren and I are both on vacation so we did some more grillin' by the pool - chicken, burgers, salad & baked potatoes
Tuesday ~ no take-out today, will be out sailing today so am putting potato soup in the crockpot, it'll be ready when we get home! Potato Soup (I'll be using leftover baked potatoes from Sunday's BBQ)
Weight Watchin' Wednesday ~ Hungry Girl's Hot Tamale Pie
Thrifty Thursday ~ Whole Wheat Pasta with Chickpeas and Lemon (can't get much cheaper than a nice bowl of pasta!)
Fishy Friday ~ Ack! Neither of them eat fish so it's going to be Clean Out Refrigerator Night, am sure there will be enough leftovers to go around
Social Saturday ~ the girls will be headed home today, Beren and I are planning to use a gift certificate we've been saving and go out to dinner
Sunday ~ Family BBQ with burgers & dogs, the usual fare

Happiness Is....

*waking up refreshed and glowing after some romantic time with My Man followed by a good nights sleep..ahhh...



*the fact that after today Beren and I are on vacation! Whoo-hoo! Although we're not planning to go anywhere, I know that plans can change in a heartbeat around here and I might find myself packing up Bettie for a little road trip, who knows? (If Tabitha will give up my luggage, that is!) Either way, I'm looking forward to a 10 days of puttering around the Castle, frolicking in the pool and just generally relaxing with my family and friends.

*the sense of accomplishment having done a good day's work yesterday. I hate leaving unfinished business before vacation so I kicked a** yesterday to tie up some loose ends. I worked late, came home tired yet satisfied. Today will probably be another long one but well worth it for peace of mind while I'm away.



*booking a beautiful hotel room for Kali & Kevin's 1st Anniversary, I can't believe it's been a year since their wedding! They've had a lot of stress over the past 12 months, they deserve a night to themselves to unwind and just celebrate each other.



*Inspired by La Belette Rouge (love her blog!), I looked up one of my favorite musical movie moments and enjoyed it all over again. My dear friend who is a phenomenal opera singer in her own right (I must introduce you to her soon!) provided me with this link for further auditory pleasure as well as translation. Swoon...what better way to start my day than with beautiful music?

Do I Have an Addiction?

I have a big project at work I need to finish before I go on vacation (yay!) Thursday, the sink is overflowing from last night's birthday celebration (more on that later), the laundry is piling up (again) and the dust bunnies are threatening to take over my house. Oh, and there are bills to pay, treadmills to walk, cats to play with, family to enjoy, a man to love.

There simply isn't enough time to get it all done, and yet here I sit blogging and playing on Facebook. Why is that?

My friend Karla is considering taking a moratorium on social networking sites but just the thought of that makes me panic. I think that while some people spend hours in front of the tv (Beren comes to mind) to relax and unwind, this is it for me. Other than a movie here and there and a couple of favorite shows, I could live quite nicely without the television. The internet, though? No way in hell. It's my lifeline to friends, out of town family, education, inspiration, and just plain fun! It's an outlet and a distraction, even call it an addiction if you will, I'll own it. I'll find other ways to squeeze more time into my day but I'm not giving up my time in cyberspace. As long as my family is cared for, my house is reasonably clean and my finances are in order, I just don't see the harm in spending a couple of hours a day in front of my laptop, do you?

Monday Menu Planning


The next couple of weeks will be unusual here at the Castle as we have Beren's girls for two weeks solid! This will be the first time they've stayed with us for such an extended period of time and while I'm certainly looking forward to it, it does present a few challenges.

I've mentioned before that they are rather picky eaters and, unlike the rest of us, not fans of vegetables but also don't eat meat so cooking for them is a bit difficult! They eat lots of pasta at home so I'll be focusing on that and will sneak some veggies in where I can. *wink*

Happy Birthday, Jillina!



We celebrated Beren's daughter's 16th Birthday at the castle last night, had a wonderful BBQ with family & friends followed by the most delicious and beautiful cake, if I do say so myself! A combined effort of mine & Kali, using the mottos "make it work" and "more is more!"







We all had a wonderful time grillin' & chillin', a fabulous celebration of a lovely young lady!

Busy Month for Bambi

It's been a wild whirlwind of a month for my Baby Girl, she went to Prom, graduated from high school and turned 18, whew! Where did the time go???
